Macedonian Honey

There are several reasons for this:

The first group of reasons depends on the location conditions - the place where the bees collect nectar.

If the nectar is collected from plants that grow at altitudes above 1000 meters, then it is scientifically proven that this honey has 100 times more antibacterial properties than honey obtained from the nectar of lowland plants. Additional conditions are air and soil pollution - (mainly with pesticides and other toxins). Our bees are at 1200 - 1600 meters above sea level and within a radius of 8 km there are no extensive agricultural activities.

The second group of reasons is how the beekeeper breeds the bees and how he treats the honey when taken out of the hive and further packaged.

There is a big difference whether the honey is extracted by centrifugal force or by the method of natural leakage. 95% of beekeepers practice spinning honey as a method for its extraction. Rarely does anyone have speed control and uniform centrifugal extraction force. With that there is a great possibility for a small modification of the crystal structure of the honey during extraction. We get honey by the method of natural leakage from the honeycomb. Thus, our honey in unchanged form and in quite significant quantities contains the other ingredients that are naturally present on the frame - propolis, wax, pollen. Additionally, we do not use honey filtration methods.
