Easy “double” honey salad

As honeydew contains both vitamin C and copper, they promote healthy skin by aiding collagen production and tissue repair. The combination of its high water content and potassium levels make honeydew melon effective at maintaining healthy blood pressure levels.

Honey is loaded in antioxidants that may help prevent cellular damage and boost your memory. Also honey contains nutrients such as protein, water, energy, fiber, sugars and various vitamins and minerals. It contains minerals such as iron, sodium, potassium, phosphorus, zinc and calcium. Honey is a good source of vitamins that include folate, niacin, riboflavin, Vitamin C, and Vitamin B6.

Pistachios are supernuts that help keep the heart, eyes, and immune systemhealthy.

This is an easy to prepare honeydew salad with honey dressing.

Ingredients for the salad:
  • ½ honeydew melon, diced or melon balled
  •  1 bag mixed salad greens
  •  ¼ cup pistachios, shelled

Ingredients for the dressing:
  •  ¼ cup fresh lime, juiced
  •  1 HONEYSTICK
  •  2 Tbsp olive oil
  •  Pinch sea salt

Preparation:
Make dressing by juicing the lime in a small bowl, and mixing in the olive oil, honey and salt; mix well. Place mix greens in a large bowl. Dice the melon, or use a melon baller, and place on top of greens. Top with pistachios.

Drizzle dressing on top and enjoy!
